gracias madre

On a recent trip to Los Angeles to visit family and friends, my husband and I got the opportunity to start checking places off my "LA eats" list. Gracias Madre had been on the list for a while, and although neither my husband nor I are vegan, we both thoroughly enjoyed the eats and the environment of this plant-based hot spot! We were joined by my best friend Rachel, and her husband John Luke, and the four of us sat outside in the restaurant's beautiful (and huge!) terrace. Gracias Madre serves cuisine inspired by the kitchens of Mexico, but uses locally sourced, organic ingredients, which makes for some seriously delicious dishes. Bold flavors and seasonally-conscious produce make this fresh take on Mexican food healthier than your average go-to spot, and I promise you won't miss the meat!

We made it in time for the happy hour menu, so we started with margaritas (duh!), nachos, a gordita, and a flauta. The margaritas here are clean, simple, and not super sweet, so thankfully they won't leave you with a headache in the morning. The nachos came with housemade tortilla chips, piled high with fresh toppings like guacamole, salsa verde, and cashew cheese. Our husbands shared the gordita and flauta, which looked tasty, but actually seemed a little small for $6 each. For our entrées, the boys shared a trio of veggie tacos, as well as the enchiladas verde, and from my small sampling, I can give them a definite thumbs up.  Rachel and I chose salads, which were full of fresh, healthy ingredients, and I couldn't resist a side of butternut squash with molé. Yum! As you know I can never pass on dessert, so I peer-pressured the table into ordering two: the peanut butter cup and the fudge brownie (a la mode). Both were super rich and decadent, and the perfect ending to a great meal with even better friends. I can see why Gracias Madre attracts both vegans and meat-eaters, alike. The atmosphere alone is reason enough to visit- whether you hang inside at the lively bar, or go outside to lounge by the fire pit- but the high quality, delicious food ensures you'll be planning a return trip soon.

ranger cookies

Ranger Cookies are a childhood favorite of mine- they always make me think of home. My mom got the recipe from a neighbor in the Texas Hill Country after she brought over a freshly baked batch, and we quickly became enamored. The original recipe calls for shortening (butter flavored Crisco!), but for health's sake I have updated it to either unsalted butter, or if you want an extra coconut kick, coconut oil. I love the combination of sweet and salty textures with the corn flakes, pecans, coconut, and oats! There are several names and variations out there for these cookies- Cowboy, Everything, Kitchen Sink, but to me they will always be Rangers. I recently got the opportunity to whip up a batch of these as part of a steamy shoot for Sports Illustrated Swimsuit! The retro, 50s housewife-inspired looks were sexy & fun, and any shoot that requires me to eat cookie dough is a win in my book! I hope you enjoy these as much as I do.

Ranger Cookies:

  • 1 cup unsalted butter, diced (or coconut oil)

  • 1 cup granulated sugar

  • 1 cup light brown sugar

  • 2 large eggs

  • 1 tsp pure vanilla extract

  • ½ tsp salt

  • ½ tsp baking powder

  • 2 tsp baking soda

  • 2 cups all-purpose flour

  • 2 cups Corn Flakes (or similar cereal)

  • 2 cups rolled oats

  • 1 cup unsweetened coconut, shredded or flaked

  • 1 cup pecans, toasted and chopped

Preheat oven to 350 F. Combine butter, sugars, eggs and vanilla using a stand mixer fit with a paddle attachment on medium-low speed. Add salt, baking powder, baking soda and flours, mixing until no lumps remain.  Finally, mix in corn flakes, oats, coconut and pecans.  Drop by heaping tablespoonful onto a cookie sheet and bake for approximately 10 minutes or until cookies are lightly browned. Let cool and enjoy! Dough and cookies also freeze well.

paulie gee's

When a pizza craving hits, you can't do much better than Paulie Gee's. This Greenpoint, Brooklyn institution makes wood-fired, Neapolitan-style pies, served with both classic and unique toppings. Owner Paul Giannone uses locally sourced ingredients when possible, plus fior di latte and Italian tomatoes, of course, creating some of the most mouth-watering pizzas around. Bing cherries, prosciuitto di Parma, baby arugula, orange blossom honey, beef brisket, and kale pesto are all possibilities you'll find on the menu, and Paulie Gee's offers several vegan pies as well.  I love the atmosphere here- you enter through big barn doors, and the interior feels like a rustic cabin. Although the restaurant doesn't take reservations (so get there early), they are in the process of opening a slice joint nearby for all your quick, on-the-go pizza needs, which is super exciting news! Definitely stop by next time you're in Brooklyn!

pressed juicery

Most people know Pressed Juicery as the place to go when you're on a health kick and need some extra greens in your life in the form of a cold-pressed juice. While that definitely still rings true, I was excited to try out their newer offering, Freeze. These vegan treats are made from 100% fruits, vegetables, & nuts, then frozen into a delightful soft serve consistency, and served with an array of toppings. As an afternoon cool-off on a sunny day, I chose the Greens Freeze, topped with shredded coconut. It was super refreshing and delicious! Coconut meat and dates are added to their green juice base, which takes the Freeze to that "dessert" level, while still keeping things super healthy. I also sampled the creamier Chocolate Freeze, which has an almond, date & cacao base, and would make for the perfect dessert topped with almond butter! I definitely suggest checking them out next time you stop by.
